It expires in a pitcher and is fermented for 6-8 months, it remains at full chacha for about 1.5/2 months, it is transferred to a cistern, the primary leek is removed and it returns to the pitcher. After a maximum of 6-8 months in the pitcher, it is poured into stainless steel vessels and bottled after 9/10 months of fermentation.
